We're thrilled to announce the return of our flagship Southeast Asian culinary adventure: Chiang Mai and the Festival of Lights, November 13-20, 2024. This journey will be guided by the acclaimed Pok Pok chef Andy Ricker and his friends throughout the country.


Your Fearless Leader: Andy Ricker

The James Beard Award-winning chef and founder of the Pok Pok restaurants is not just a chef; he's a culinary anthropologist and enthusiast, dedicated to preserving, promoting and sharing the flavors of Northern Thailand. He designed this trip to go wide, from Chiang Mai to a helicopter journey into the Akha heartland, to our final stop in the north: the cool mountains of Nan along the Laotian border. And of course expect a big last night in Bangkok with some of the most famous chefs in the land.


What to Expect: Flavor Everywhere

  1. Market Immersion: Dive headlong into the heart of the north's bustling markets with Andy and Fern at your side. Explore the vibrant stalls, sample from the best vendors, and discover the best regional products that form the backbone of northern Thai cuisine.

  2. Hands-On Cooking: Roll up your sleeves and learn the secrets behind some of the deep umami dishes and fiery sauces that define the region. A journey is only as good as what you're able to take home from it.

  3. Beautiful Accommodations: From Tamarind Village in the walled old city of Chiang Mai to the exclusive Chakrabongse Villa on Bangkok's Chao Phraya River, we stay at some of the most unique luxury properties in the country.

  4. Go Wide up North: We'll be covering ground, and air, on this journey. A helicopter ride into otherwise inaccessible coffee plantations of the Akha people. A journey into Chiang Rai and its Yunnanese enclaves, followed by a sojourn into a northeastern region that few foreigners visit.

  5. Exclusive Dinners: One-of-a-kind dining experiences curated by Andy and his friends, who happen to be some of the giants of Thai cooking, from Prin Polsuk to Dylan Eitherong, Chef Black, Ellar Hanief and more. From intimate gatherings to the best roadside noodle shops to private feasts, see the diversity of Northern Thai culture and cuisine through Andy's eyes.


We have a maximum of 10-12 travelers and we interview everyone who wants to join, to be sure it's a good fit with the group and with our style of travel.
