We're back with the latest What We're Eating.

I've been looking forward to soup season all summer. So as the weather starts to feel (a little) like fall, I'm thinking about Houston's best pozoles, gumbos, hot pot and more.

The list of soups we love is long. Here's a few of our favorite bowls around Houston.

Gumbo from Viola & Agnes' Neo Soul Cafe.

#1 - Viola & Agnes' Neo Soul Cafe

What to order: Gumbo

Why we love it: Stuffed with chicken, sausage, okra and blue crab, the messy, heaping bowl of gumbo is the best in Houston.

Location: Seabrook

Wonton noodle soup at Hong Kong Food Street.

#2 - Hong Kong Food Street

What to order: Wonton noodle soup

Why we love it: Bouncy noodles and shrimp-and-pork dumplings float in a broth that's given extra umami punch via dried flounder powder.

Location: Katy

A bowl of beef pho is seen at Di An Pho in Houston, Monday, Aug. 25, 2025.

#3 - Di An Pho

What to order: Pho dac biet, any of the pho ga options

Why we love it: The amber, star anise-scented broth simmers for 18 hours — no shortcuts here. Golden chicken soups are made with equal attention to detail.

Location: Asiatown
