The 2026 food trends to come: from cabbage to hojicha

In 2025, the matcha obsession was real, Dubai chocolate (sigh) was everywhere we turned and thousands of handrolls were hand-rolled.

This year's food trends are more about chewy textures, unexpected vegetables and chefs refusing to be boxed in.

First up, cabbage is going to be the it-girl vegetable of 2026. Expect to see it charred, fermented, folded into tacos and more.

Multisensory eating is now mainstream. At the moment, people are loving chewy food, whether that's mochi, tteokbokki or (my personal favourite) pão de queijo. So if it bounces, jiggles or pulls apart dramatically, it's in.

Drink-wise, hojicha is on the up as matcha's cooler, more low-key older sister. Toasty, nutty and lower in caffeine, it's the afternoon latte swap you didn't know you needed.

Another significant trend for 2026 is 'cuisineless' dining – chefs cooking what they want, when they want and mixing influences without sticking to traditional geographical boundaries. Border control? 2026 doesn't know her.

We can't wait to eat our way through 2026.
